## Key Takeaways

Here are the core details you need to mix a Basil Hayden Old Fashioned with confidence.

- The official Basil Hayden Old Fashioned uses 1.5 parts Basil Hayden Kentucky Straight Bourbon Whiskey, 2 tsp demerara syrup, and 3 dashes Angostura bitters, stirred and strained over a large cube with an expressed orange peel.
- Demerara syrup at a 2:1 ratio adds molasses depth and controls dilution better than 1:1 simple syrup, pairing naturally with caramel and vanilla flavors in the whiskey.
- Basil Hayden’s high-rye mash bill provides spice and structure that keeps the drink balanced, even at an approachable 80 proof.
- Success depends on dilution control: use large ice cubes, stir 20–30 seconds, measure syrup precisely, and express the orange peel to release aromatic oils.
- Basil Hayden is part of the Small Batch Collection made at James B. Beam Distilling Co. in Clermont, Kentucky.

Basil Hayden is part of the Small Batch Collection made at the [James B. The whiskey in your glass comes from the same family that has been distilling there since 1795.

Now that you have the recipe, focus on a key ingredient that shapes the drink’s balance: demerara syrup.

## How To Make Demerara Syrup For A Basil Hayden Old Fashioned

Demerara syrup is the sweetener that makes the Basil Hayden Old Fashioned click. [Its molasses notes complement the caramel and vanilla in whiskey, and a 2:1 ratio adds sweetness with less water than 1:1 simple syrup, giving more control over dilution.](https://drink101.com/articles/old-fashioned-recipe)

**From-Scratch Method:**

1. Combine equal parts demerara sugar and water in a saucepan.
2. Heat gently, stirring, until the sugar dissolves completely.
3. Cool, then refrigerate in a sealed jar. [It keeps for three to four weeks.](https://drink101.com/articles/old-fashioned-recipe)

For a richer syrup with even less dilution, use a 2:1 ratio, or two parts demerara sugar to one part water. [The richer ratio contributes deeper caramel, toffee, and light molasses flavor, plus a fuller texture, while adding less water per unit of sweetness.](https://bar6.com/articles/old-fashioned-cocktail-recipe)

If demerara is unavailable, 1:1 simple syrup works at the same 2 tsp measure. The drink will taste slightly thinner and less complex, but the Basil Hayden Old Fashioned remains balanced and enjoyable.

With the syrup dialed in, the next choice is how you handle sugar and bitters in the glass.

## Sugar And Bitters Choices For A Basil Hayden Old Fashioned

Choosing the right sugar and bitters keeps the drink consistent from one round to the next. Below are answers to common questions.

**What type of sugar is best for an Old Fashioned?** Demerara is the Basil Hayden Old Fashioned standard. [Its molasses character complements whiskey’s caramel and vanilla, and the richer texture integrates with less upfront water than white-sugar simple syrup.](https://bar6.com/articles/old-fashioned-cocktail-recipe) A sugar cube is a workable alternative and dissolves gradually for a different sweetness curve, but syrup gives more repeatable results.

**What brand of bitters is best?** Angostura aromatic bitters are the official choice for the Basil Hayden Old Fashioned. [Their baking-spice, clove, and cinnamon notes bridge the whiskey and the sweetener](https://bar6.com/articles/old-fashioned-cocktail-recipe) and provide the drink’s traditional aromatic backbone.

**Should I use orange or aromatic bitters?** Aromatic bitters are the default. [Orange bitters would brighten the finish and sharpen the citrus note, which works as a variation but differs from the standard build.](https://bar6.com/articles/old-fashioned-cocktail-recipe) For experimentation, try a split: mostly aromatic with a single dash of orange.

**How much bitters goes in an Old Fashioned?** [Old Fashioned recipes typically call for 1 to 3 dashes of bitters, with some bartenders preferring three dashes for a more pronounced bitter note.](https://prohibitiondenver.com/how-to-make-a-perfect-old-fashioned-at-home) [Bitters function as aromatic counterpoints rather than seasoning: too few leaves the drink flat, while too many masks the spirit’s character.](https://glassandnote.com/cocktails/old-fashioned-gets-around)

## The Secret To A Good Basil Hayden Old Fashioned

Most home bartenders go wrong with dilution, not the recipe. Two common failure modes show up, and both are easy to fix.

**Too sweet:** Measuring syrup by eye or using a richer syrup than the recipe specifies throws off the balance. Fix this by measuring the demerara syrup precisely and tasting before you add more.

**Too diluted:** Small or wet ice, over-stirring, or letting the drink sit after building all add excess water. Fix this by using one large cube in both the mixing glass and the serving glass, stirring 20–30 seconds, and serving immediately.

Three technique details matter most: ice, stirring time, and the peel. [A single large ice cube has less surface area relative to volume than several small cubes, so it melts more slowly and dilutes the drink less.](https://drink101.com/articles/old-fashioned-recipe) Use one large cube in the mixing glass and one in the rocks glass.

[Thirty seconds of stirring with dense ice adds approximately 0.75 oz of water to an Old Fashioned, targeting a final ABV of roughly 32–35%.](https://glassandnote.com/cocktails/ultimate-best-old-fashioned-cocktail-recipe) Stir 20–30 seconds to chill and add a controlled amount of water. You are aiming for balance, not stirring until the ice disappears.

[The orange peel is an ingredient; expressing the oils by pinching the peel skin-side down over the glass adds an aromatic layer that separates a good Old Fashioned from a bland one.](https://drink101.com/articles/old-fashioned-recipe) Rub the rim and drop it in. [Bitters degrade after five years and turn harsh.](https://glassandnote.com/cocktails/ultimate-best-old-fashioned-cocktail-recipe) Keep them fresh and stored upright away from light and heat.

Beyond technique, the whiskey’s mash bill plays a major role in how the drink feels and finishes.

## How Basil Hayden’s High-Rye Mash Bill Changes The Drink

Basil Hayden is made with a [mash bill of roughly 63% corn, 27% rye, and 10% malted barley, substantially higher in rye than the approximately 13% typical of Beam’s standard bourbon recipe.](https://drinknation.com/ingredient/basil-hayden-kentucky-straight-bourbon-whiskey) That higher rye content helps the Basil Hayden Old Fashioned stay balanced with a modest amount of demerara syrup and aromatic bitters.

This preference for high-rye bourbons in stirred cocktails is well founded. Their pepper and spice character pushes through bitters and sweeteners without getting lost, while wheated bourbons often taste softer in the same style of drink.

[As rye’s proportion in a bourbon mash bill increases, the whiskey generally becomes drier, more aromatic, and more assertive through the finish, with common high-rye characteristics including black pepper, clove, cinnamon, and a more persistent spicy finish.](https://lochsofwhisky.com/blog/mash-bill-explained-corn-rye-wheat-their-impact-on-flavour) In Basil Hayden, that translates to a drier, spicier frame that tolerates the recipe’s demerara sweetness without tasting flat.

Basil Hayden is [always bottled at 80 proof (40% ABV), the minimum level legally required for American whiskey](https://robbreport.com/food-drink/spirits/basil-hayden-cognac-cask-reserve-bourbon-1238621307), so excess sugar or dilution can overwhelm it. The official recipe is calibrated to let the whiskey lead. Adjust only after tasting:

- **Want it sweeter?** Add demerara syrup in small increments, about a quarter-teaspoon at a time.
- **Want more spice forward?** Pull the syrup back slightly so the rye can step forward.

To see how Basil Hayden’s high-rye profile compares to other bourbons in the family, read the [Beam guide to high-rye bourbons similar to Basil Hayden](https://www.beamdistilling.com/articles/high-rye-bourbons-like-basil-hayden/?utm_source=ai-growth-agent&utm_term=basil-hayden-old-fashioned-recipe).

## Basil Hayden Old Fashioned With Dark Rye

A Basil Hayden Old Fashioned with Dark Rye keeps the same technique but shifts the drink’s character. [Basil Hayden Dark Rye is one of several experimental expressions the brand has released](https://robbreport.com/food-drink/spirits/basil-hayden-cognac-cask-reserve-bourbon-1238621307), and its port-finish character, with dried fruit, a touch of sweetness, and a rounder texture, changes the balance in the glass.

You may want slightly less demerara syrup, since the Dark Rye carries more inherent sweetness. The spice stays present but softer, and the finish lingers longer.

[Explore Basil Hayden On The Dark Rye Old Fashioned](https://www.beamdistilling.com/james-b-beam-distillery-tour/book-a-tour?utm_source=ai-growth-agent&utm_term=basil-hayden-old-fashioned-recipe#id=beam-made-bourbon-distillery-tour-tasting-clermont)

## Why Basil Hayden Works Well In An Old Fashioned

Basil Hayden’s high-rye profile makes it a strong fit for an Old Fashioned because it holds up to sugar and bitters without going flat. [Bourbon usually makes a rounder Old Fashioned because its corn-heavy mash bill brings vanilla, caramel, and soft sweetness that connects naturally with sugar and orange oil.](https://bar6.com/articles/old-fashioned-cocktail-recipe) Rye, on the other hand, makes a drier, spicier drink with pepper, grain, and herbal notes that stand up well to aromatic bitters.

Basil Hayden delivers both styles in one bottle. The corn-derived sweetness and oak character connect naturally with the demerara syrup and orange peel, while the rye provides structure.

[Whiskey under 90 proof can get pushed around by syrup and ice melt, so the drink may not taste like whiskey after ten minutes.](https://drink101.com/articles/old-fashioned-recipe) Basil Hayden at 80 proof sits at the lower end of that range, which is why the recipe’s proportions, 1.5 parts bourbon, 2 tsp demerara, and 3 dashes Angostura, are calibrated so carefully. Trust the spec, then adjust after you taste.

## Frequently Asked Questions

### What Type Of Sugar Is Best For An Old Fashioned?

Demerara is the standard for a Basil Hayden Old Fashioned. Its molasses character adds depth and a fuller texture that complements the whiskey’s caramel and dried-fruit notes. A sugar cube or 1:1 simple syrup are workable alternatives, with a cube dissolving gradually for a different sweetness curve and simple syrup integrating instantly but adding more water upfront. For the official build, use demerara syrup at 2 teaspoons per drink.

### What Is The Difference Between Demerara Syrup And Simple Syrup In An Old Fashioned?

Demerara syrup at a 2:1 sugar-to-water ratio adds sweetness with less water than 1:1 simple syrup, which gives you tighter control over dilution. It also contributes deeper caramel, toffee, and light molasses notes that white sugar cannot match. Simple syrup tastes cleaner and thinner, integrates immediately, and demands stricter stirring timing to avoid over-dilution. For the Basil Hayden Old Fashioned, demerara is the specified sweetener because its flavor profile suits the whiskey’s high-rye character.

### How Much Bitters Goes In An Old Fashioned?

Use three dashes of Angostura aromatic bitters for the Basil Hayden Old Fashioned. Bitters anchor the drink’s aromatic structure without dominating it. Too few dashes leave the drink flat, and too many mask the whiskey’s character. Three dashes is the calibrated amount for this recipe.

### What Is The Secret To A Good Old Fashioned?

Dilution control makes the difference. The most common failures, a drink that tastes too sweet or too watered-down, both trace back to ice and stirring. For specific technique details, see the section above on the secret to a good Basil Hayden Old Fashioned.

### Should I Use Orange Or Aromatic Bitters In A Basil Hayden Old Fashioned?

Aromatic bitters, specifically Angostura, are the official choice. Their baking-spice, clove, and cinnamon notes bridge Basil Hayden’s rye spice and the demerara sweetness. Orange bitters brighten the finish and sharpen the citrus note, which works as a variation rather than the standard build. If you want to experiment, try a split with two dashes aromatic and one dash orange so the aromatic bitters still lead.

### Can I Make A Basil Hayden Old Fashioned With Dark Rye?

Yes. Use the same technique with a mixing glass, 20–30 seconds of stirring, a large cube, and an expressed orange peel. Basil Hayden Dark Rye brings a port-finish character with dried fruit, a touch of sweetness, and a rounder texture that shifts the drink’s balance. Because the Dark Rye carries more inherent sweetness than the core bourbon, start with 1.5 teaspoons of demerara syrup and taste before adding more.

## Make It Where It’s Made

The Basil Hayden Old Fashioned is a simple drink done right, and the whiskey at its center was [created in 1992 by Booker Noe as part of the original Small Batch Collection](https://thebourbonflight.com/basil-hayden-cognac-cask-reserve-bourbon-2026), made at the James B. We had a bus pick us up from the store and drive us to one of the warehouses on the campus. The lady guiding us was so knowledgeable about the brand as well as the entire operation. We were in the actual warehouse and witnessed thousands of barrels stacked up on wooden scaffolding. The overwhelming smell of bourbon maturing in those barrels was unbelievable. And it was hot that day. We got to open one of the barrels and tasted the bourbon right out of it on the spot. What a great treat. When we got back to the store, we walked around the campus a bit, saw the Beam family original house. The Jim Beam store was a pretty cool place to visit. Lots of history and exhibits, plus the display of the bottles and the merchandise. I highly recommend going there for, at least, a half day to get the full experience, dine at the restaurant etc.
